Schottischer Whisky reift per Gesetz für mindestens drei Jahre in Eichenfässern. Tatsächlich lässt man sehr guten Single Malt Whisky viel länger in den Fässern. Jedes Jahr verdunstet 0,5 bis 2% des Whiskys durch die Fasswandung. Der Schotte nennt dies: 'The Angel's Share' (Der Anteil der Engel).

casks. Very good Single Malt Whisky matures for a much longer time. 0,5 to 2% of the whisky in a cask evaporates each year through the
staves. The Scotsmen call this 'The Angel's Share'.
